Cheesy Brown Rice with zucchini

Did some variation to this original recipe coz mummy just fell in love with zucchini!! I tried this and loved it. Picky eater ern loves it to! So was thinking of introducing rice to her… and the end result tasted and looked like paella! (spanish rice) If your hubby wants to eat, just add a little salt and parsley flakes to taste!

Ok this recipe makes 6 portions (if its solely for baby otherwise I think it will be wiped out as soon as its done!!)

I used whire rice instead. (and cooked it with 3/4 cup of milk and some water)

1/4 cup rice or brown rice

1 tablespoon vegetable oil  (I prefer butter)

3/4 cup carrot, peeled and grated

3/4 zucchini chopped (you may add broccoli florets too)

3 medium tomatoes, skinned seeded and chopped

1/3 cup cheddar cheese (I added parmesan cheese too)

Parsley flakes (optional)

Salt (if you are eating it in a separate pan)

Cook rice.

Heat oil in a pan, add carrots and zucchini and saute till soft. Add tomatoes and continue for another 2 minutes or so.

Add rice into the pan, (I added another tablespoon of butter). Using gentle heat, stir in cheese and sprinkle parsley flakes. (optional)

smells great too!

Oh do note that I used a little more liquid than you would for cooing normal rice. Happy cooking!
