Cottage Pie

Ok I know… I really shouldnt call this cottage pie coz im using chicken in place of beef… but it still turn out quite ok la… (from annabel karmel)

Makes 3 portions (can freeze the rest)

1 cup carrot peeled and chopped

2 cups potato, peeled and diced

1 tablespoon olive oil

1 small onion peel and chopped

1/4 bell pepper cored seeded and diced

1 small garlic clove peeled and crushed

6 oz lean ground beef (chicken)

1 tablespoon fresh parsley chopped

2 tablespoon tomato paste (must use paste not sauce or ketchup!)

1/2 cup chicken broth

1 tablespoon butter

1 tablespoon milk

1 egg beaten

cook carrot in boiling water first then add potato and cook for another 15 mins or so.

Heat the skillet with oil and saute onion and then garlic. Add meat. Then grind the meat for smoother texture (optional) Return topan, add parsley, tomatoe paste and broth, bring toboil then simmer for abt 5 mins. When potato and carrots are cooked, srain and mash with milk and butter.

Spoon the meat into ramekins (I dont have it at hand so I make do with “makeshifts”.) Top with potao and carrot. Brush with a little beaten egg. Place in preheated oven (about 2oo C). Done!
